I’m Emma and welcome to my blog, Not Enough Meals in the Day!
I started this blog to satisfy my ENDLESS appetite for cooking – one that surpasses both my and my family’s physical appetite / calorific needs. So, thank-you-in-advance for indulging my passion for cooking!
There is a more serious side to Not Enough Meals in the Day, namely, that there are just not enough meals in the day to be filling them with junk, unhealthy snacks and empty calories. So, to this end, you will find the majority of the recipes on this blog fall under the category of “healthy comfort food” – unfussy, family friendly recipes made-over to be from-scratch, free from nasty additives, wholegrain, refined sugar free where possible, as well as accessible to people with food sensitivities.
Personally, my passion includes sourcing organic, sustainable and local ingredients, direct from farmers where possible, but I am just happy to think that you might enjoy my healthier food makeovers and share in my joy of cooking!
